Years and years ago I created a grain-free Dutch Baby recipe for Allrecipes that was topped with a warm berry compote. Ever since then I’ve been a little obsessed with any dish made in the iron skillet involving eggs, maybe fruit or veggies, and fresh herbs. And if you’ve been around this site for very long, you know basically I’m addicted to breakfasty-brunchy recipes. So this savory, grain-free Dutch Baby with smoked salmon and fresh herbs is a delightful new favorite and I think it will be for you, too!
If you’re not familiar with a Dutch Baby, it’s basically a very simple puffy pancake made in the oven. No flipping, no watching for bubbles or burning, and no waiting for everyone to be able to eat while you work to keep servings warm or watch them sadly grow cold. 😉 This particular one is made with grain-free flours so it fits with a Paleo, gluten-free diet.
If you’re avoiding dairy, I recommend using a store-bough unsweetened, dairy-free plain yogurt or try this recipe for homemade dairy free sour cream from Mary at Barefeet in the Kitchen (Danielle at Against All Grain also shares this dairy free cashew sour cream that’s very similar!).
Because it is savory, this grain-free Dutch Baby would be great for brunch or even lunch or dinner.
It’s got both protein and healthy fats. And while I know some may not be in the habit of buying fresh herbs, they offer such a great punch of flavor and color that I encourage you to use them! They also pair so well with the tangy flavor of the creme fraiche, yogurt or sour cream and contrast well with the saltiness and richness of the salmon and pancake.
This Paleo, puffy oven pancake is beautiful and flavorful enough to serve guests for brunch, but it’s simple enough to make for a weekend breakfast at home.

- 1/3 cup salted butter
- 8 eggs
- 1 cup coconut milk
- ¼ cup arrowroot powder
- ¼ cup almond flour
- 1 teaspoon fresh squeezed lemon juice zest first
- 1 teaspoon sea salt
- ½ teaspoon fresh cracked pepper
- ¼ teaspoon dried thyme or Herbs de Provence
- 3-4 ounces fresh smoked salmon about 5 slices, cut into bite-sized pieces
- Fresh chives
- Fresh dill
- ⅓ cup crème fraiche sour cream or yogurt (I prefer dairy-free)
- Zest from 1 lemon

Preheat oven to 425 degrees Farenheit.

Put butter in large iron skillet (or glass baking dish) and place in the oven until butter melts and starts to brown, about 5 minutes.

Meanwhile, place eggs in a blender and pulse until smooth; add coconut milk, arrowroot powder, almond flour, lemon juice, and seasonings.

Blend until smooth, 45 to 60 seconds.

Remove the skillet from oven and carefully pour batter over browned butter into the hot skillet.

Bake at 425 degrees until pancake is set in the middle and edges are lightly browned, about 23 minutes.

Top with salmon, fresh chives and dill, crème fraiche, and lemon zest and serve.
This oven pancake will puff up and then fall shortly after removing from oven.
