I wonder if breakfast will ever not be my favorite meal. I could eat it any time of day, and I especially love skillets and hashes. Making time to actually cook for breakfast seems to place value on a morning spent gathering thoughts and nourishing body and heart. Plus, there’s something about a salty, fatty breakfast that fills you and holds you over for much longer. I fostered my sweet potato love the first time I did a Whole30, but I’m pretty sure I fell in love with breakfast when my grandpa cooked for me as a teen.
My oldest sons are married now and they love cooking for their brides. I especially love it when they come back to visit and cook for us – and sweet potatoes are almost always on the menu. My oldest son learned his favorite stove top version of sweet potatoes from his father in law. Our daughter, serving families on the other side of the world, loves cooking breakfast with her housemates. And my youngest two sons make me better breakfast that we can get anywhere out! I guess breakfast love is a family affair!
This air fryer sweet potato hash has bacon in it for plenty of protein, and you’ll love it served with light, fluffy scrambled eggs. (It also is perfect if you want a fast keto breakfast.) A while ago my son sent me this video of Gordon Ramsey’s “perfect” scrambled eggs… and he was right. We’ve tried them several times, and they are perfect.
No air fryer? Although I love the speed for this recipe and the perfect texture it creates for the potatoes, you can easily toss ingredients together in an iron skillet. Saute over medium-high heat (try substituting avocado oil) until crispy and cooked through. Serve your sweet potato hash with bacon with lacy, light scrambled eggs and a side of fresh fruit.

- 2 large sweet potatoes cut into small cubes
- 2 slices bacon cut into small pieces
- 2 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper
- 1 teaspoon dried dill weed

Preheat an air fryer to 400 degrees F .

Toss sweet potato, bacon, olive oil, paprika, salt, pepper, and dill in a large bowl.

Place mixture into the preheated air fryer.

Cook for 12 to 16 minutes.

Check and stir after 10 minutes and then every 3 minutes until crispy and browned.

- Try using avocado oil or ghee for a flavor variation.
