Do you get cravings for a certain food all at once? That was me with peaches for several weeks – both in and out of season! I’ve been especially longing for the fresh, warm, drippy flavors of peaches, remembering that one road trip where we got stuck on the side of a major highway with a bus full of teenagers, but near a roadside fruit stand so all was well while we waited for help. I remember biting into that firm, fuzzy peach that gave way to warm, melty juice running down to my elbow, and I almost wish to be back on the side of that road! Instead, I think I’ll make these amazing paleo sheet pan chicken thighs with peach salsa. Don’t you want them now? 🙂
I love sheet pan meals, and I bless the person who first posted a recipe that went haywire. They’re fast (usually), easy to make, and full of flavor. They’re also perfect to make for serving guests, because you can do almost all the prep work in advance. Pop them in the oven just as guests are arriving, while you nibble on appetizers or salads. The serve them as-is, on the table or buffet-style, so guests can pick what they like. No last-minute dinnertime stress!
Here’s a tip for you: if you want to make weeknight dinners even easier, prepare all the ingredients a day or two before. Make your salsa and clean your potatoes and beans (cut them up right before cooking). Season your chicken and save it in a sealed container. Then cook it up while you’re going about evening chores for a hands-off meal. We like to play a family card game while our dinner is cooking when it’s as easy as a sheet pan chicken thighs dinner.
Have not-so-spicy eaters in the family? You can always reduce the jalapeno to half. Want a little more kick? Add a pinch of red pepper flakes to your chicken and/or vegetables. You could also make this sheet pan chicken thighs dinner with broccoli, brussels sprouts, or even hearty kale (I’d add that the last ten minutes or so to the roasting pan).
Make this recipe completely your own by swapping for chicken breasts, quarters, or legs (be sure to monitor cooking time for fully roasted chicken). Add rice or cauliflower rice if you like. And I recommend doubling your salsa – you’re going to want to eat it with a spoon. - 8-10 boneless chicken thighs
- 2 large red onions cut into large chunks
- 1 pound small potatoes
- 1 pound fresh or frozen green beans*
- 3 tablespoons olive oil
- Zest of 1 lime
- 1 teaspoon dried thyme
- ½ teaspoon ancho or chipotle chili powder
- 1 teaspoon minced garlic
- 1 teaspoon coarse sea salt I prefer smoked
- 1 teaspoon cracked black pepper
- 4 large peaches peeled diced
- 1 red pepper chopped
- 1 jalapeno pepper seeds removed and finely diced
- 1 small red onion minced
- 1 bunch cilantro chopped
- ½ teaspoon salt
- Zest and juice of 1lime
- 1 teaspoon olive oil
- 1 teaspoon honey*

Preheat oven to 425 degrees.

Place chicken, onions, potatoes, and green beans into a large bowl.

Drizzle with olive oil and add lime zest, thyme, chili powder, garlic, salt and pepper.

Using your hands, massage chicken and vegetables to coat with seasonings.

Place the chicken, onions, potatoes and green beans** onto a parchment-lined rimmed baking sheet.

Roast for 25-28 min. or until chicken is 165 degrees internal temperature.

Plate chicken and vegetables and top with fresh peach salsa.
*For a Whole30 compliant recipe, omit honey altogether or replace with no-sugar-added strawberry preserves (with just berries and fruit juice).
