When I began writing Refined Journey, sheet pan meals were on my “must have” list.
I wanted to create meal plans that would make it easy to create healthy, delicious food, to free our time and energy to grow in other ways, too!
I know God wants us to take care of these bodies He’s given us, and part of that means eating good food. While Refined Journey is NOT a diet, it is a great way to dig into the concept of nourishing both our body and our soul well. When sheet pan meals became a widespread favorite, I was hooked. They’re the perfect way to get a real-food meal on the table quickly, and they play a huge part in the Refined Journey menu plans! Here are some of my favorite sheet pan meals that are grain-free, gluten-free, refined sugar free and dairy free – with NO extra effort to make them that way.
Sheet pan meals are a great way to save time and dishes (hallelujah!) and make something delicious and nourishing, too.
If you’re feeding a smaller crowd (or a table for one!), they have the added benefit of making leftovers easy and so good. Just portion out the leftovers even before eating into glass containers, and you’ll have lunches or later-week-dinners.
While most sheet pan meals I’ve loved involved roasted poultry, I love the spin Michelle at Unbound Wellness puts on this one-pan meatloaf meal.
Paleo Running Momma has such delicious recipes, and this Sheet Pan Breakfast Hash of COURSE has my love because it’s breakfast! (I WILL write that breakfast book in its entirety as soon as that door opens. 🙂 ) This sheet pan meal would be perfect for breakfast at dinner or to serve as a lazy Saturday brunch.
Castaway Kitchen has cooked up a magical creation of sheet pan London Broil with Toasted Coconut Brussels Sprouts. I’m kind of entranced. To be honest, cooking steak well has been a fear of mine for some time – Christina’s made it so accessible! (I also like how she plays with sweet flavors in savory dishes.)
Sheet pan Cauliflower Rice is a brilliant concept! So much easier as a sheet pan meal, because the hands-on cooking time is saved. Go read while it bakes. Roast some chicken thighs alongside for a perfect family meal – this one is easily scale-able!
Sheet pan cheese steak, though?!
Once I discovered What Great Grandma Ate, I kept going back for Jean’s gorgeous recipes. I’ll never forget the first time we visited Gino’s and Pat’s, the warring Philly cheese steak icons, when we moved to the Jersey shore. Our youngest may have eaten his weight in cheese steak! Finding a healthier version makes me so happy. This Sheet Pan Cheese steak dinner is AWESOME!

Throwing some chicken and vegetables on a pan, all loaded with healthy fats and herbs and spices, is one of my favorite ways to get a simple, fast sheet pan dinner on the table (even if it’s a sports night and we’re all grumpy-hungry and I’ve forgotten once again to prep!).
