Peaches and Chai Gluten-Free Oatmeal Bowl (Dairy Free Creamy Chai Oatmeal)

Mmmmmm… warm, chewy, spicy, sweet peaches and chai gluten-free oatmeal… this is the sweetest kind of breakfast (which is actually not overly sweet).  And it just seems to work for a summer morning before a day in the sunshine or a slow autumn or winter breakfast in a cabin.  This gluten-free oat bowl has healthy fats and protein, it’s dairy-free, and I think it will “stick to your ribs” in the right way, giving nourishing energy to help you get all the things done on your agenda today.  (Or it’ll be the perfect compliment to a cozy reading morning where you sit tight with your coffee and catch up on some much needed rest…)

I love sweet things for breakfast, but I don’t love that starving-an-hour-later feeling.  So for me, having good fats and protein are very important.  The combination of nuts and a creamy dairy-free milk alternative fit the bill; you could absolutely use heavy cream instead.  The candied ginger really takes this recipe over the top, too!  If you don’t do sugar, look for a freeze dried or no-sugar added ginger (Thrive Market is my favorite place to shop for clean, healthy ingredients!).  Don’t have all the ingredients listed below?  Swap for your favorites.  Any milk you choose will add a creamy element to the peaches and chai oat bowl, though the Nutpods has such a great flavor and texture.  Try swapping for pecans or walnuts to change up the flavor.  And if you don’t have the spice blend (you should grab it here, though), you can use pumpkin pie or apple pie spice to give the kick this breakfast needs.

Gluten-free, dairy free creamy oats with fresh peaches and chai spice

Ingredients
  • cup gluten free oats
  • 1 cup water or steeped chai tea boiling
  • ¼ teaspoon dried ginger or ginger snap seasoning plus extra
  • 1 tablespoon maple syrup optional
For topping:
  • ¼ cup chai creamer or milk of choice
  • 1 peach sliced into 8 wedges
  • ¼ cup sliced almonds
  • ¼ cup chopped candied ginger
  • 1 tablespoon maple syrup
Directions
  1. Pour oats into a large bowl with boiling water or tea, spice blend and maple syrup, if using.

  2. Stir and cover with a plate or lid; let sit for 3-5 minutes (or follow package directions).
  3. Divide into two serving bowls and top with creamer, peaches almonds, ginger and maple syrup.

Another note: if you prefer, you can absolutely use frozen peaches in this gluten-free oat bowl.  And to take it over the top?  I’d add a little dollop of grass-fed ghee while the oats are cooking.  Yum…

Side note: at the time I created this recipe, peaches are totally in-season and available at the little orchard/farm market up the road, and I’m pretty much daily eating juicy peaches while standing over the kitchen sink.  Does anyone else love this as much as I do?  They just taste better that way…
