Does soup for breakfast sound weird to you?
I promise – if you give it a try, with this sausage and egg breakfast soup Whole30 breakfast becomes a breeze (and you’ll be hooked whether you’re a Whole30-er or not!).
Soup for breakfast may seem strange, but think about it. We’re taking some of the best ingredients and combining them together in one bowl. Instead of grain-based cereal that might be yummy at first but will leave you sugar-crashing and hungry a few minutes later, you can make this soup in 20 minutes or so (or even meal-prep it in advance!) and warm it up in a mason jar each morning. The flavor is so good (just a tiny bit reminiscent of sausage gravy and my grandpa’s laden table of sliced tomatoes, green onions and crispy sausage). You can enjoy this soup any time of year, too.
When I was in my first years of high school, I lived with my grandparents. My grandpa would get up early in the morning while I was out delivering papers through those cold fall/winter/spring mornings, and when I came home before school, he’d set the table with all the goodies. Aside from the white-bread toast slathered with peanut butter and corn syrup stirred together and the cream of wheat with milk and sugar, this recipe gives me all the feels from those early mornings, without the foods that really aren’t my best investment in our long-term health.
By the way – this sausage and egg breakfast soup recipe is its most delicious when served topped with soft boiled eggs. I have to say, I wrestled with peeling (aka massacre of) boiled eggs of any kind for the first few decades of my life, give-or-take. It wasn’t until I’d owned an Instant Pot for about five years that I finally obeyed the advice I’d received over an over and tried using it to boil eggs. I’m never looking back.

Ok, let’s get to this sausage and egg breakfast soup Whole30 recipe!
- 1 pound ground beef
- 2 teaspoons fresh or 1 teaspoon dried sage
- 1 teaspoon minced garlic
- 1 teaspoon dried marjoram
- 1 teaspoon dried thyme
- 1 teaspoon onion powder
- 1 teaspoon dried fennel
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 pinch crushed red pepper flakes
- 32 ounces chicken broth
- 1 can coconut milk
- 2 tablespoons arrowroot flour
- 2 tablespoons coconut aminos
- Cracked black pepper to taste
- Green onion sliced
- Arugula
- Tomato slices
- 4 soft-boiled eggs halved

In a large skillet cook ground beef with sage, garlic, marjoram, thyme, onion powder, fennel, salt and pepper.

Once browned, stir in crushed red pepper flakes.

While meat is cooking whisk together coconut milk with arrowroot flour; stir into cooked, seasoned meat.

Add coconut aminos and adjust salt/add cracked pepper to taste.

Ladle soup into four bowls.

Top with fresh arugula, tomato slices, two egg halves, and sprinkle of green onion.
