Dairy Free Coconut Mojito Smoothie (Keto Green Smoothie)

One of my favorite ways to start the day is with a slow, quiet few moments before everyone else wakes up.  No matter how late we might be up chatting with our young adults or visiting acquaintances, there’s a sacredness about the morning, with its light and its stillness.  But I wake up hungry.  And if I’m going to preserve that still sweetness, I don’t want to invite the natives to join me by creating aromas with cooked eggs and bacon.  So as long as their doors are closed (I totally check for this), I can usually make a nourishing keto green smoothie all by myself.

Now, my daughter and I have been on a ketogenic diet for a couple weeks to balance hormones and work out some sugar issues, and this smoothie is dairy-free, paleo-friendly, Whole 30 friendly, and low in carbs.  The collagen adds a boost of protein as well.  Plus it tastes like dessert, and kills the morning hunger pangs so I can get on with my quiet.  (My girl loves her quiet as much as her mama, and we both usually disappear to dive into Bible and journaling time before the restless natives, aka brothers, appear.

Coconut Mojito Smoothie
A non-alcoholic “mocktail” that is healthy and delicious. This paleo breakfast smoothie is also low-carb and dairy-free. (Make sure to use only food-safe essential oils for recipes.)

Ingredients
  • 1 cup full-fat canned coconut milk
  • Juice of one lime about 3 tablespoons
  • 4-6 fresh mint leaves
  • 1 cup fresh spinach leaves
  • 1 tablespoon coconut oil
  • 2 cups ice
Optional
  • 2 drops peppermint oil**
  • 2 drops liquid stevia
Directions
  1. Add ingredients to a high-speed blender in order listed.
  2. Beginning at low speed and increasing to high, blend until combined and frothy.
Recipe Notes

*This smoothie also makes delicious popsicles. Just pour into popsicle molds
and freeze overnight.
Run warm water over molds for a few seconds to release pops.
**If using essential oils, always follow best practices and be sure to use food-safe oils.
