One of my very favorite easy lunch ideas is the now-iconic concept of easy mason jar salads. They’re on a rotating plan in our house and an integral part of the Refined Journey (my 40 day menu-planning study that incorporates biblical study for nourishing body and soul).
Easy mason jar salads are great, because they can be changed up for any diet or flavor profile. Even better, you can make a batch at the beginning of the week and enjoy them with no prep! This recipe is grain-free, dairy-free (if you omit the cheese 🙂 ) and Paleo-friendly.
These easy jar salads are packed with flavor and they're Paleo and Whole 30 friendly as well as a perfect option for meal prep and kid-friendly lunches.
- 1 teaspoon red wine or balsamic vinegar
- 1 teaspoon extra virgin olive oil
- 1/4 teaspoon whole grain mustard
- 1/8 teaspoon minced garlic
- 1/4 teaspoon herbs de Provence
- salt and pepper to taste
- 3 stalks steamed asparagus
- 1/4 cup marinated artichokes
- 4-8 Kalamata olives, pitted
- 4-6 slices Prosciutto
- 6-8 cherry tomatoes, halved
- 1 tablespoon pine nuts
- 1/4 cup goat cheese (optional)

Combine vinegar, oil, mustard, garlic, salt and pepper, and herbs in the bottom of a mason jar.

Whisk well using a fork.

Layer remaining salad ingredients in order listed.

Cover using a jar lid and refrigerate up to 3 days before serving.
*If following Whole 30, be sure all ingredients are compatible.
