Everything Bagel Keto Rolls

As our kids get older, their visits are more and more precious. I love making something delicious for them, but I also don’t want to spend every minute at the stove. My favorite is always breakfast, where everyone wanders into the kitchen as they wake, drawn by the aroma of hot coffee and crispy bacon. Depending on the season, there’s often a food preference/allergy to consider. These everything bagel keto rolls, originally created for Allrecipes as a keto hamburger roll, are perfect for breakfast with everything bagel seasoning. They’re low-carb, Paleo-friendly, gluten-free rolls that are still light and fluffy and perfect with a slather of butter.

These do take some time to bake, but the prep time is super fast.  We threw them in the oven while bacon was cooking on a rack over another baking sheet, so it made for a low-maintenance breakfast.  We tossed together some scrambled eggs and enjoyed a perfect Paleo-friendly, keto brunch.

Keto “Everything Bagel” Rolls

These rolls take some time to bake, but they’re quick to throw together so your hands-on time is short, leaving you time to make crispy bacon and eggs, or a dinner to go with these chewy-on-the-inside, crisp-on-the-outside, keto rolls.

Ingredients
  • 2/3 cup finely ground almonds
  • 1/4 cup coconut flour
  • 1/3 cup flaxseed meal
  • 3 tablespoons psyllium husk powder
  • 1 teaspoon baking powder1 teaspoon onion powder
  • 1/2 teaspoon salt or to taste
  • 1 tablespoon sesame seeds or as desired
  • 3 egg whites +1 whole egg
  • 1 teaspoon apple cider vinegar
  • 1 cup lukewarm water
Directions
  1. Preheat the oven to 350 degrees.
  2. Combine ground almonds, coconut flour, flaxseed meal, psyllium husk powder, baking powder, onion powder, and salt in a bowl.
  3. Combine egg whites and egg in a separate bowl.
  4. Add vinegar and mix well.
  5. Add wet ingredients to the bowl with the flour mixture and mix well.
  6. Add water.
  7. Blend using an electric mixer until a dough forms.
  8. Divide dough into 8 equal parts and place on a baking sheet.
  9. Shape into buns and sprinkle with sesame seeds.
  10. Bake in the preheated oven until golden brown, about 50 minutes.
Recipe Notes

Do not substitute fresh egg whites with liquid egg whites from a carton.
